Green Chile Stew

Ingredients:

  • 1 jar Ol’ Gringo Gourmet Green Chile Sauce (or 2 if you want to amp up the chile!)
  • 2-2 ½  pounds pork or beef, cubed
  • 4 cups potatoes, cubed
  • 2 cups water or broth
  • ½ cup flour
  • 2 tbsp shortening, olive or canola oil
  • ½ tsp garlic powder
  • 1 large onion, diced
  • 2 tsp salt (to taste)
  • ¼ tsp black pepper (to taste)

Directions:

  1. Place the meat and flour in a large zip lock bag and shake to coat the meat.
  2. Heat the oil in a heavy skillet. Add the meat and brown. Transfer meat to a 3-quart stew pot.
  3. Leave the oil in the skillet and sauté onions, then transfer to the stew pot.
  4. Add remaining ingredients to the stew pot and simmer for 45-60 minutes.  Stir occasionally.  Add additional water or broth if too thick.
