Ingredients:
- 1 jar Ol’ Gringo Red Sauce
- 1/2 onion, diced
- 2 cups cheddar cheese, grated
- 1 dozen corn tortillas
Directions:
- Steam or lightly sauté tortillas in oil and set aside. If you are sautéing, blot the tortillas to remove excess oil.
- In a medium sauce pan, heat Ol’ Gringo Gourmet Red Chile Sauce until hot.
- Dip a corn tortilla in to the sauce and lay on a plate. Drizzle more sauce on the tortilla. Sprinkle with onions and cheese.
- Repeat this sequence (a single serving is typically three layers). Serve immediately or place plate in to a 180 degree oven to keep warm.
In true New Mexico style, top your enchilada with a fried egg.
