Ingredients:
1 jar Ol’ Gringo Red Sauce
1/2 onion, diced
2 cups cheddar cheese, grated
1 dozen corn tortillas
Directions:
Steam or lightly saute tortillas in oil and set aside. If you are sauteing, blot the tortillas to remove excess oil. In a medium sauce pan, heat Ol’ Gringo Gourmet Red Chile Sauce until hot. Dip a corn tortilla in to the sauce and lay on a plate. Drizzle more sauce on the tortilla. Sprinkle with onions and cheese. Repeat this sequence (a single serving is typically three layers). Serve immediately or place plate in to a 180 degree oven to keep warm. In true New Mexico style, top your enchilada with a fried egg.
