1 jar Ol’ Gringo Red Sauce (Mild, Med, Hot or a combination)
1/2 onion, diced
2 Cups Cheddar Cheese grated
1 dozen corn tortillas
Heat Ol’ Gringo Gourmet Red Chile Sauces until hot. Lay tortilla into the sauce and spoon sauce over and leave in until soft. Lift the tortilla out of the sauce and lay in the middle of a plate. Sprinkle onions and cheese over. Repeat the sequence. (A single serving typically is three tortillas). Place plate into a 180-degree oven to keep warm. Add a fried egg to the top for a perfect New Mexico tradition.
