Meoqui, named after the city in Northern Mexico, is carefully crafted using flame-roasted tomatillos and chile to arbol to delivery a zippy jolt of heat.  Though the deep red and seedy appearance may strike fear into the hearts of casual salsa consumers, there is no need to worry about extreme heat.  The consistency lends itself to uses beyond the salsa bowl, such as a meat rub.
